I love how easy it is to cook camp oven roast chicken, it doesn’t have to be difficult, keep the flavors simple.
This recipe was cooked on my Ozpig using the bottom heat from the Ozpig, and the top heat was using some heat beads that I got hot in the belly of the Ozpig and then used long-handled tongs to place them on top of the camp oven.
Get your Ozpig cranking, then i loke to put some heat beads into the belly of the oven to get them to ash ove to use them as top heat.
Into a bowl, put the chopped parsley, chopped rosemary, lemon rind, garlic and salt and pepper, then mix in the butter until it’s all combined together.
Lift the skin of the chicken breast, and grab a spoon and put some of the butter mix in the cavity of the chicken.
Once you have filled under the skin, rub the remaining butter mix all over the chicken.
In the bottom of your camp oven place the Sliced Onion and Lemmon, this will be used as a trivet.
Step Five
Place the camp oven on your selected heat source, and cook for 20 – 30 minutes.
place your chosen vegetables around the chicken and put the lid back on until the camp oven roast chicken and vegetables are cooked.
