This camp oven vegetable stew recipe is perfect for vegetarian camp oven lovers and would be the perfect base to add any ingredients you want to it. Perfect to be served with Damper.
The camp oven in this photo was a gift from me to Nik, one day at work Nik asked me to borrow one for a recent camping trip, I replied I’ve got one you can have that was given to me that same day to give away to someone who wants it. I’m glad he’s enjoying using it.
Nik is a fun-loving free spirit who loves camp oven cooking, going for a surf and travelling in his van on the weekends.
To get started, start by warming up your camp oven, for stews you only need bottom heat.
Chop up all of the vegetables into large pieces and dd a splash of oil and brown off the onion and garlic, then add the smoked paprika.
Add the rest of the vegetables into the camp oven, except for the mushrooms and the celery. add some pink rock salt at this stage for taste.
Give it a stir for a minute.
Pour in the kidney beans, diced tomatoes and just cover up with some vegetable just to the top of the vegetables and let simmer for 15 – 20 mins then add in the mushrooms and celery.
Cook for a further 20 – 30 minutes or until all the vegetables are cooked and serve with some damper or bread.

Directions
