Green Pea & Ham Soup

Green Pea & Ham Soup

Green Pea & Ham Soup is a classic dish that can be enjoyed all year round. It can easily be made in the camp oven and served with crusty damper.

Ingredients

  • 1 500gm pack of green dry split peas – soak in water overnight or 8 hours
  • 1 teaspoon of minced garlic
  • 2 diced carrots
  • 2 diced celery sticks
  • a meaty smoked ham hock
  • a large onion, diced
  • 2 & 1/2 litres of unsalted chicken stock or stock cubes made up to the equivalent
  • 1 bay leaf
  • salt and fresh ground pepper to taste

notes – when camping I chop all ingredients and vacuum pack before going

Directions

Step One

Throw all the ingredients in a large pot or camp oven.

Step Two

Bring to boil then reduce to a simmer.

Step Three

Simmer for 2 hours stir regularly so peas don’t congeal on the bottom and burn, you may need to add water along the way.

Step Four

After 2 hours remove the ham hock, strip and dice ham that is falling away and put back into the pot.

Step Five

Season to taste and serve with fresh bread or damper and butter.
