Family-Size Fresh Strawberry and White Chocolate Chunk Cookie
This fresh strawberry and white chocolate chunk cookie is FAMILY SIZED and cooked in the camp oven – now who wouldn’t want that for dessert when camping!!
Ingredients:
1¼ cups plain flour
½ tsp baking powder
pinch of salt
¼ cup butter softened
¾ cup sugar
120g cream cheese softened
1 egg
1 tsp vanilla extract
¾ cup chopped fresh strawberries
2 tbsp lemon juice
150g white chocolate, chopped
Method:
Step One.
Preheat camp oven on the coals with coals on the lid.
Step Two
Pour fresh lemon juice over the chopped strawberries. Drain after a few minutes.
Step Three
Whisk together 1¼ cups of flour, salt and baking powder. Set aside.
Step Four
Beat butter with sugar and cream cheese until it’s light and fluffy.
Step Five
Add egg and vanilla and mix well.
Step Six
Gradually add flour mixture and mix well.
Step Seven
Stir in chocolate.
Step Eight
Sprinkle strawberries with 1-2 tbsp flour and toss until coated, then gently add them to the cookie mix.
Step Nine
Place mix in greased 25cm tart tin and place on a trivet inside your camp oven. Cover with the lid filled with coals. Put the camp oven on the coals and cook for 10 – 15 mins or until just slightly browned around the edges.
